I'll listen to whatever's going, a music degree does that to you. And by whatever, I mean starting with medieval chamber music and ending in contemporary postmodern weirdness. About the only thing I don't usually listen to is rap and hip hop, I guess. Oh, and pop, because I'm now literally qualified to say that it's terrible.
My favourites are probably romantic-era classical music, contemporary film scores (and orchestral game music), chiptunes, and big band jazz. I want to find more motown and mambo/salsa stuff.
The playlists I end up going back to are usually pretty eclectic, like the Katamari Damacy and Cowboy Bebop soundtracks, or mixes that I've made.

If you want to ease into some new genres, you could try Anamanaguchi and Daft Punk to head towards electronica, Pink Floyd and the Beatles for classical and experimental... no jazzy rock is coming to mind really, maybe Django Reinhardt but only because it's guitar music.
If you want to branch out more past rock, try Louis Armstrong for jazz, Jo Hisaichi or John Williams for classical (or Debussy), and if you really want to blow your musical mind, here are some good ones.
