Because it is easier to aim the spray to the body part where it hurts and it´s less likely to drip. I also think the pressure may help for the wounds to recover more quickly. If you´re asking why is it called a "potion" I think it´s just a name used for convenience. What does a revive has that can, well... revive (or energize) a pokémon?
