Look, the main idea is that Munchlax evolves into Snorlax. That stays. And let's face it, Munchlax is way less a baby than Smoochum or Pichu, to name some examples. Plenty of room for Yawnlax.
You could look at it this way: Munchlax is just a basic pokémon that got introduced later than its evolved form. And in any case, we're not throwing the basic concept behind babies away, we're just stating that in Bombur, it was discovered that Yawnlax is the baby, not Munchlax.

Besides, we're sticking to Nintendo's facts: Munchlax evolves into Snorlax. But we're also going to stick to our own facts: the existence of Yawnlax. We're not going to get rid of it just because Nintendo introduced Munchlax. We would have, perhaps, if Munchlax was as baby-ish as Yawnlax, but it isn't. Based on both of their concepts, a Yawnlax that evolves into Munchlax makes perfect sense and just works.
